In contrast are the interesting findings of one scientist, who observed that the composition of the fat molecules of olive oil compare the closest to those found in mother’s milk. Hence it could be assumed that olive oil is probably the most acceptable kind for human consumption, because the body will find it the easiest to process for assimilation. Whether this researcher’s view is right or wrong, his findings make us sit up, listen and think. It should also prevent us in the future from being too quick and one-sided in judging a natural product. The benefits of a single constituent, in this case the value of unsaturated fatty acids, should never lead us to ignore the others – which may prove equally important in the end.
