FOOD FOR IMMUNE: BEAN RECIPES

GREEN BEAN CECY

1/4 cup green pepper 1/4 cup sweet red pepper 1/2 cup celery

1 1-lb. can tomatoes (no salt added) 1 lb. fresh green beans

1/4 lb. fresh snow peas 1/2 tsp. onion powder

Wash all vegetables. Dice green and red peppers. Thinly slice celery. Crush tomatoes. Steam green beans until tender, then combine in pot with other ingredients. Cook over medium heat for 10 minutes.

Serves 6 to 8.

WILSHIRE BARLEY BEAN

1 carrot, large

1 onion, large

2 stalks celery 1 potato, large

1/2 cup pearled barley 1/2 cup lima beans, large

white pepper

garlic powder

Wash all vegetables. Dice carrot and onion, thinly slice celery. Cut potato into medium-size pieces. Put barley and beans into a 3-quart pot. Fill with water to cover beans and barley by an inch. Bring barley and beans to a boil, then reduce to simmer. Cook 20 minutes, then add other ingredients; cook until lima beans are tender. Add water if necessary.

Serves 4 to 6.

BEAN SALAD

1/2 cup mixed beans and lentils, cooked 1/2 tomato 2 1/4 inch onion slices

1 tsp. salsa (no sugar added) 1/2 clove fresh garlic, minced

Mix all ingredients and enjoy. Serves 1.

PETY’S CHILI

2 cups kidney beans, raw 1/2 cup small white beans (navy)

1/4 cup yellow split peas 1 cup raw bulgar

1 onion, chopped 4 cloves garlic, crushed 1 cup carrots, chopped 1 cup celery, chopped

white pepper, chili powder and garlic 1 cup sweet red peppers, chopped 2 1/2 cups fresh tomatoes, chopped 5 tbls. tomato paste

juice of 1/2 lemon

Cook beans and peas in 2 quarts of water until tender, (about 1 hour), adding more water if necessary. Boil 2 cups water in pot, add raw bulgar, cover pot and let stand for 15 minutes while bulgar cooks. Saute onions and garlic in water. Add carrots, celery and spices. When vegetables are almost done, add peppers, tomato paste and lemon juice. Cook until tender. Combine all ingredients and heat together gently in moderate oven. Serve topped with low-fat Parmesan cheese and parsley.

Serves 6 to 8.
